Sonoma Distilling American Rye Whiskey has been made up of 80% unmalted Canadian and Californian rye and 20% malted rye from the UK, giving it a spicy and dry flavor. It is then aged in charred oak and ex-rye barrels. It has aged a minimum of fifteen months with the majority of blends above two years.
Sonoma Rye offers a flavor profile of vanilla, allspice, white pepper, dried apricot, and walnut. It offers aromas of spicy rye, pecan, date rolls, and cigar tobacco. Distilled in hand-made copper stills, their unique approach to rye whiskey has been made from only non-GMO North American Rye and British Rye Malt. They use open-top fermentation and locally source pure spring water to capture the subtle nuances of Sonoma County.
